Simple Seafood Stew
Easier than you might think, seafood stew is impressive to serve and quick to make. Select your favorite combination of shellfish and dense white fish (Halibut and Snapper work well). Plan on using about 4 clams, 4 mussels, 4 medium sized shrimp, 8 bay scallops and ¼ lb of fish per soup container. Combine the Roasted Tomato Basil soup, ½ cup of white wine, 1 dash of Worcestershire and 1 Tbsp. of clam juice in a saucepan. Simmer until hot and then drop in the clams. Once they begin to open, add the mussels, shrimp, scallops and fish (cut into ½-inch chunks). Simmer in a covered pan until the clams and mussels open; about five to eight minutes. Top with chopped parsley and a dash of Tabasco sauce. Pair with Pinot Noir.
Roasted Tomato Basil Polenta
There are plenty of easy-to-make or prepared polentas at your local grocery. Prepare polenta according to directions and serve in a shallow bowl, smothered with hot Roasted Tomato Basil soup. Add a little goat cheese on top for a creamy finish, and don’t forget to sprinkle with fresh basil or oregano! Pair with white Viognier.

Sweet or hot Italian sausage is the perfect compliment to our Roasted Tomato Basil. An Italian sausage link nestled in a crusty roll and topped with melted mozzarella is delicious when dipped in a steaming bowl of Roasted Tomato Basil soup. Looking for a smaller portion? Brown the Italian sausage and crumble it right into a bowl of warm soup, then scoop up bites with a sliced baguette! Pair with Volpolicella.
Easy Puttanesca
Heat one container of Roasted Tomato Basil in a saucepan over medium heat until it reduces slightly. While simmering, add sliced Kalamata olives, capers, diced roasted bell peppers, a dash of red chili pepper flakes and two anchovy fillets. When mixture is thick and chunky, add four cups of very al dente fusilli pasta and cook for another five minutes to let pasta absorb excess liquid. Finish the dish with 1 Tbsps. fresh, chopped parsley and a sprinkle of parmesan cheese on top! Pair with Chianti.
Roasted Tomato Basil with Shrimp & Avocado
Looking for a cool, light dinner? Take the Roasted Tomato Basil out of fridge and let stand at room temperature for about 20 minutes, then serve cool – not cold. Divide soup into serving bowls and mix in some chilled, cooked shrimp and a handful of diced avocado. Other options include diced green bell pepper, cucumber, fresh baby mozzarella or chunks of grilled portabella mushrooms. Pair with Sauvignon Blanc.
Gourmet Grilled Cheese with Roasted Tomato Basil
Nothing beats a grilled cheese sandwich with tomato soup! Make it gourmet by combining your favorite artisan bread with a sharp cheddar or smooth Muenster for a masterful grilled cheese. For a hearty and healthy meal, serve it with a side salad by tossing baby romaine with a light vinaigrette. Simple and delicious! Pair with Beaujolais.
